Root Soup

Saute yellow onion, leeks or green onions (I used the green ones from my CSA box) and garlic in olive oil. Cube potato, celery root, parsnip, carrots (and any other root vegetable you have), add to pot and stir. Add water to cover, put a lid on and bring to boil. Simmer until all vegs are soft. Add salt and pepper to taste.

I squeezed in some fresh lemon juice, poured in some dry white wine, and a little cream, then used an immersion blender to make it smooth. Roasting the vegetables would add some depth of flavor, as would adding some herbs. Experiment- you can’t go wrong with fresh vegetables!
