Oh So Delicious Radicchio Salad


I know there are a lot of recipes with chicory greens and a great salad dressing on the Full Plate site…that’s because a great chicory salad with a delicious dressing makes every meal that much better, so I like to add them whenever a new and simple dressing comes my way. This one has been a favorite at our house, easy to make, stores well in the fridge (for up to a month!) and can be shaken and added to any greens last minute for a nice compliment to your quick dinner, be it home made or still in it’s to-go container. The salad pictured here is a super simple Radicchio and Watercress salad. The Watercress from last weeks share is amazing! Great in Ramen or Udon noodle soup, and very tasting in a salad….I don’t know, maybe served with a heart shaped pizza. What fun, let watercress be your friend.


2 T olive oil

1 T crumbled feta cheese

2 t Dijon mustard

1 t salt

1 t lemon juice

Combine all ingredients in a jar with lid, and shake until well incorporated. (The feta is sticky sometimes, so you might want to whisk after shaking too.) Let sit at room temperature for 15 minutes before serving. Keeps refrigerated for up to a month.
