Brussels Sprouts with Bacon and Walnuts

This recipe has been passed to us from a share member.  It’s a good one.  A great one!
4 slices bacon
1/2 an onion (one cippolini is about right, or you can substitute with green onions or chives if you want, no need to fry them though)
3 tbsp red wine vinegar (at least)
1 tbsp sugar
salt and pepper
1 lb of brussels sprouts, sliced (think cuisinart)
1/2 cup walnuts, toasted and broken into pieces

Fry up some bacon until crispy.  Remove bacon onto paper towels and then chop into pieces.

Thinly slice the onion and fry in the grease on med-low heat until softened, 1-2 min

Add red wine vinegar, sugar, salt and pepper into the grease to make a dressing.

Add in brussels sprouts and cook in hot dressing until wilted but still crunchy.

Toss with walnuts and bacon, and la voila!
